Rex loaves in the Hood

Fans of Rex Bakery, Little Chalfont, (featured in June issue) will be pleased to hear that 3Sons are now offering a selection of Rex loaves.

The Rex Baker is Glenn,  a local who retrained after a career in the city. Bread is made on the premises daily. The sourdough loaves are Rex’s biggest boast.. so many varieties with a benefit beyond first class flavour,

“Sourdoughs are delicious but also known to be a really healthy bread” says Glenn.  “We always recommend them to anybody with health or bread-dietary concerns. Our Rex Sourdoughs take me 3 days to make.  They rise thanks to a natural leaven from Misbourne honey that I mix & prove with organic flour and water.   This very long ferment slowly converts the starches to be easy to digest, helping reduce bloating. In fact, published studies show that Sourdough has the lowest impact on GI/ blood sugar so have even been recommended for Type II diabetics.”
