And if you’re stuck on what to bake, here’s Jane White’s favourite recipe!

Chocolate Fudge Cupcakes

(makes 12)

nMB7YN6

100g dark chocolate
100g butter
2 large eggs
100ml milk
130g caster sugar
25g cocoa powder
100g plain flour
1 tsp baking powder
  • Pre heat the oven to 180C. Line a cupcake pan with cake cases.
  • Melt the chocolate in a bowl over a pan of simmering water, or in the microwave. Stir in the butter until melted. Whisk in the eggs, milk and sugar.
  • Into this mixture sift in the cocoa powder, flour & baking powder, and lightly mix until all ingredients are combined and the mixture is smooth.
  • Resist the temptation to eat the batter at this stage!
  • Divide the mixture into the cupcake cases and bake for 20-23 minutes.

Buttercream frosting

2 tbsp cocoa

250g icing sugar

pinch of salt

½ tsp vanilla

120g butter

2 tbsp cream or milk

  • Allow the cakes to cool fully before decorating — ice them with ready-made frosting, or make a chocolate buttercream by beating together the frosting ingredients and piping or spreading it onto the cupcakes.
