Pick of the week from Andrew Fleming Florist are hydrangea – magnificent big bloomers in autumnal hues of plums, burgundy and deep pink. Make a dramatic display while fresh then let them dry out – they should last for about a year before the colour fades

For best results water dry – Set the stem in deep water letting the head rest on the sides of the vase for support – keep out of direct light to preserve colour. By the time the vase is empty the flowers should be dry – they will make a rustling sound when ready, just run your hand gently over to test.
You can also dry by hanging individual blossoms upside down, by their stems but they tend to get a bit more brittle dried this way . They are too big for microwave drying
